I have forty plus years experience in the candy industry in molding, enrobing, slab work, panning, cutting, and starch work. I have developed creams, caramels, toffees, crisps, brittles, marshmallows, nougats, fudge, and jellies.
I worked for Archibald Candy Company making and developing candy for Fannie May, Fanny Farmer, Laura Secord, and Sweet Factory. I am now retired and do consulting work throughout the confection industry.
